Lest she be forced to toot her own horn, the article Brenda Danet 
recently cited:

Danet, Brenda. 1997. "Books, Letters, Documents: the Changing 
Aesthetics of Texts in Late Print Culture." Journal of Material 
Culture 2:5-38.

is a really nice thoughtful look at these questions. Naomi Baron's 
book _From Alphabet to Email_  is also a good reference.
