Natalie,
I don't think users can edit w/o a Google account. They can look however.
http://documents.google.com/support/bin/answer.py?hl=en&answer=44677

Depending on the user sophistication, you might tell them to just create a
Google account then have it forward to their regular Email address.

Dear colleagues,

Help needed!!!!

I have created a Google Docs spreadsheet with  self-sign-up schedule
for our organization and sent it to the mailing list of members.
But now I realize that not all members have google accounts, and it
seems one cannot access a google doc without having one.

Is there any other options besides asking everyone to open a google account?
