I don't know what kind of education you are interested in. But Megan Sweeney did an impressive ethnographic study (based on feminist research values) on the educational value of books and book clubs among women prisoners which she details in her 2010 book "Reading is my Window." It includes a literature review and theory interlaced with her analysis of the situation of women who self-educate in the face of a dearth of educational programs in prison.
