In addition to Isabel's excellent suggestion for Around DH, you could also
look at the often quite substantial abstracts from the past years of the
international Digital Humanities conference http://adho.org/conference or
search for project announcements in the archives of the Humanist mailing
list http://dhhumanist.org/.

I don't know how far back you want to go, but Amy Earhart has been
collecting information about early digital humanities projects at
http://dhhistory.blogspot.co.uk
