Hi Marina

There are many publishing platforms you can use, since print on demand
is everyday more important for academic publications

But if you want your book to be catalogued as open (i.e. freely
availabe under a CCBY license) you have the alternative of DOAB -
Directory of Open Access Books
http://www.doabooks.org/
A requirement to be catalogued is that your book has to be published
after peer reviewed
In their sponsors, you can find Springer Open and Open Edition as
places to publish

Also you can try other open access publishing tools like arxiv.org or FigShare

And if you'd rather organize the publication and publish it yourself
only, Lulu.com is probably one of the fastest. But you'd put then the
open version in a companion site
It can be Academia.edu

I have a chapter on a book in Lulu and I quote it like this in my personal site
