Hi Harel,
I have lots of possible suggestions, but to start from a historical angle (including corporate history), I would strongly suggest Elizabeth Petrick's book "Making Computers Accessible: Disability Rights and Digital Technology" (https://jhupbooks.press.jhu.edu/title/making-computers-accessible).
And while it's a separate medium, the history of web accessibility as corporate practice also intersects with the development of TV closed captioning, for which Greg Downey's book "Closed Captioning: Subtitling, Stenography, and the Digital Convergence of Text with Television" is great: https://jhupbooks.press.jhu.edu/title/closed-captioning
