Regrets that no theoretical works come to mind. However, I recently came across an interesting case study regarding visually impaired technology end-users and the challenges they face when accessing online resources. Hopefully it can aid any snowballing activity you might undertake.

Dear all,
I am Harel Chait, a PhD student at the Business School, Bar Ilan
University.
In the past I have studied web accessibility from the social rights,
standards, and design perspective but am now turning to business and
economic motivations to further the field.
I would like to research the field of web accessibility for people with
disabilities and am looking for articles which include theories related
to the corporate need to make their websites accessible for people with
disabilities. Most of the theories I found are focused on the social
rights, independence and personalization for people with disabilities,
but I would like to understand the basics of inclusiveness for people
with disabilities through technologies for the business sector. The
laws are relevant at this time, but legal aside, if I am a business
owner what theories might explain motivation to invest in making my
websites/apps etc accessible for people with disabilities?
What could you please suggest me to look for and which theory articles
might help me?
