Kamal,
The key is to get the 'starter kit' that starts the fermentation in the pot. I tried to get it last time when I was in assam and I was treated to some good Lao-Pani in Xonapur. By the time I left, the kit did not make it to my car.
The people around me told me all kinds of tricks how not to spoil the brew. But due to lack of the starter kit, I am yet to try a batch.
May be next time I go to Oxom, I'll have better luck. If I do, I'll share with you.

Is there any difference between Japanese alcoholic beverage made out of
fermented rice called " Rice Beer "and Assamese " Lao-Pani "?
