Dear Jim,

I think the most prominent "non software" usage of github in the
meta-category are:

1. github pages https://pages.github.com/

together with static site generators (such as Jekyll), one generates
website, blog and etc...

2. gitbook https://www.gitbook.com/blog/features/github-gitignore

3. Project management https://huboard.com/

4. Chatting such as gitter
